BBQ Recipes
After a great day at the beach, there's nothing better than a few beers and a BBQ. Even if you can't cook, or can cook but can't be bothered, these recipes are so easy, you don't have to be a TV chef to make them.
Steak Kebabs
You will need:
- 1/4 lb. beef sirloin, cubed
- Small glass of red wine
- Good splash of oil
- 1 chopped onion
- 3 tomatoes or 8 cherry tomatoes
- 2 sliced onions (wedges)
- 2 wedged green peppers
Method:
Marinate meat at least 2 hours in wine, oil, and onion. Lightly fry pepper and onion wedges. String meat, tomato, onion, pepper on skewer. Grill 15 minutes, turning frequently. Serves 4.
Stuffed Grilled BBQ Pork Chops
You will need:
- 4 extra-thick rib pork chops, about 1" to 1 1/4" thick, to serve four
- A large handful dry breadcrumbs
- Large pinch dry rosemary, crumbled fine
- Large pinch dry marjoram, crumbled fine
- 1 Tbsp. melted butter
- 1 sweet onion, minced
- 1 small clove garlic, minced
- 1/2 tsp. salt
Method:
Make pockets in the chops by slitting from the edge of the eye (the round bit of meat) to the bone with a sharp knife.
Combine the breadcrumbs, butter, garlic, onion, rosemary, marjoram and salt, and stuff the mixture into the pockets. Use a small skewer if necessary to hold the edges closed.
Grill the chops over medium-high heat for 8 to 10 minutes per side, turning several times, until the fat is crisp and the meat nicely browned.
Cajun Salmon
You will need:
- 4x175 g (6 oz) salmon fillets
- 1 tbs oil
- 4 tsp Schwartz Mix for Cajun Chicken
- 2 leeks, washed and finely chopped
- 50 g (2 oz) butter
- Sea salt and Black Pepper
Method:
Brush the salmon fillets with oil and whack on the barbie for 4-5 minutes. Turn, brush again with oil, and sprinkle with the Cajun Seasoning. Grill for a further 4-5 minutes.
Meanwhile, cook the leeks in the butter until softened. Season. Easy.
Serve the salmon and leeks with mashed potato. Lovely!
Sweet Chilli & Shallot Marinated Corn Cobs
You will need:
- 1 large chilli
- 4 shallots
- 1/2 tsp of grated lemon rind
- 100ml olive oil
- Salt and pepper
- 3 corn on the cobs
- Cocktail sticks
Method:
Make marinade by finely chopping chilli and shallots, adding the lemon and mixing with the brown sugar, olive oil and a little salt and pepper. Cut the corn cobs in half, place a cocktail stick in each end and marinate for two hours. Cook on the barbecue, turning regularly, until tender.

Chocolate bananas
You will need:
- 4 bananas, unpeeled
- 8 chunks of milk chocolate
Method:
Simple recipe. Make a slit in the banana lengthways. Place two chunks of chocolate in each banana and cook on the barbecue until the skins have blackened and the chocolate has melted.
